This is a favorite side in our house, and is so easy to make! These potatoes go well with pretty much any main dish!
Ingredients
- 3 medium red potatoes
- 3 medium gold potatoes
- 2 tbsp avocado oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1.5 tbsp fresh rosemary, chopped
Instructions
- Preheat oven to 450 degrees.
- Wipe potatoes with a damp cloth or vegetable brush to clean off dirt.
- Slice potatoes into quarter inch thick rounds and place on a baking sheet.
- Chop the rosemary into small pieces.
- Place potatoes on a baking sheet, drizzle with avocado oil, and sprinkle with rosemary, salt, and pepper. You can use parchment paper or a silicon baking mat under the potatoes to make clean up easier, but it is not essential.
- Stir the potatoes on the baking sheet with a spatula or clean hands until the potatoes seem to be evenly coated with the avocado oil and spices.
- Spread the potatoes in an even layer.
- Bake for 20 minutes, remove the pan from the oven, flip each potato over, and bake for 20 more minutes.
- Remove from the oven and serve immediately!

These potatoes also keep well in the refrigerator and are great reheated leftovers!
