Roasted Red and Gold Rosemary Potatoes

This is a favorite side in our house, and is so easy to make! These potatoes go well with pretty much any main dish!

Ingredients

  • 3 medium red potatoes
  • 3 medium gold potatoes
  • 2 tbsp avocado oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1.5 tbsp fresh rosemary, chopped

Instructions

  1. Preheat oven to 450 degrees.
  2. Wipe potatoes with a damp cloth or vegetable brush to clean off dirt.
  3. Slice potatoes into quarter inch thick rounds and place on a baking sheet.
  4. Chop the rosemary into small pieces.
  5. Place potatoes on a baking sheet, drizzle with avocado oil, and sprinkle with rosemary, salt, and pepper. You can use parchment paper or a silicon baking mat under the potatoes to make clean up easier, but it is not essential.
  6. Stir the potatoes on the baking sheet with a spatula or clean hands until the potatoes seem to be evenly coated with the avocado oil and spices.
  7. Spread the potatoes in an even layer.
  8. Bake for 20 minutes, remove the pan from the oven, flip each potato over, and bake for 20 more minutes.
  9. Remove from the oven and serve immediately!

Prep time: 10 minutes, Bake time: 40 minutes

Serves 4 – 6

These potatoes also keep well in the refrigerator and are great reheated leftovers!
